İskender Döner

Döner is prepared standing in front of the bleazing fire in the Döner hearth 10 -15 cm , the fire had alredy burned. Döner is roasted slowly in the fire. After the roasting, it is cut with a knife from the top to the buttom, so döner is ready for the service.

History of Döner

The family started their business in 1850s with Mehmet Efendi restaurant and they were making lamb chawarma and tandoori. The cooked meat was being sold in a fixed place and tables over the heads in those Ottoman days. During that time, the son Iskender searched for new challenges with the approach of ‘’How can we make things difficult?’’ and ‘’How can we make it better?’’. He tried to put these ideas into practice by taking support from her uncle Sabit Grandfather. His father said to him ‘’Don’t put forward new ideas’’ then he first told his mother and after that persuaded his father. As a result, he suggested ‘’putting the meat stand up over the grill instead of roasting it in parallel with the fire’’. Then they tried to roast the meat by putting it vertically and the business continued to develop with the support of Mehmet Efendi.
